Haven't posted in this thread in a while. This month will be weird with us moving but here is this weeks plan.
M - chicken bacon crockpot chowder
T - beef stroganoff burgers
W - slow cooker chicken pot pie stew
T - slow cooker maid rite sandwiches (loose beef sandwiches)
F - BBQ steaks
S - we will be out of town taking some things to our new home so we will probably eat out
Su- Bourbon chicken (crockpot)
Lots of crockpot recipes and trying to go through whats in the freezer here so we don't have to move it.

Monday: corn dog muffins, baked beans and applesauce (may change, though...different plans popping up)
Tuesday: eggs, toast, bacon gravy
Wednesday: cheeseburgers, tots
Thursday: spaghetti, homemade garlic bread
Friday: homemade pizza
Saturday: grilled cheese, soup, cole slaw
Sunday: French toast, ham

I really need to get back on track with menu planning!!
I am struggling with the fact that my youngest will be moving out in a couple of weeks to head to college.
Not so much that he is going, but that now I need to cook for only two!
I have been so used to cooking for five, (three hungry sons), then one left. Didn't change too much because the other two made up for one less mouth just fine!
Since the 2nd one moved out on his own, we have had a few more leftovers, still not much to concern myself with!
Now though, I am at a loss of how to cook for just the 2 of us! Any suggestions??? I don't want to end up eating out all the time. Our budget and our waistlines wouldn't appreciate that!!!

I'm right there with you! I will also have my youngest of three off to college in about 2 1/2 weeks leaving us as "empty nesters". I have to start cooking for two but because we're helping all three with tuition we will be on a very strict budget and we will not have much extra money for food. We probably will cook a whole chicken one day and then make meals from whatever is leftover for the week (including making broth from the carcass). We will continue to make our own bread but instead of eating three loaves per week it will be only one loaf per week. My recipe makes three loaves so we'll throw the other two in the freezer.
I'll probably make things for the two of us that was way too difficult for a family of five like homemade ravioli or noodles or something like that. Making it for a family was hard but two of us will be much easier. I'm sure we'll cook way more than we need but then I'll put leftovers in the freezer for another day.
Also, since my husband now works M-F 7 am to 3 pm and I also work M-F 8 to 4 I see us using the crockpot often for meals. During the coming winter months, I'm going to try to cut expenses by keeping the heat down and shutting unused bedroom doors, keeping the lights off during the evening hours and going to bed early while keeping the furnace down.
Pam, and any others, share your frugal meal ideas for two with us! I'm not into a lot of packaged foods so they should be from scratch type of meals.

Next week I'll be back to menu planning! We move this Friday so this week is filled with packing, cleaning and easy meals (ie Hamburger Helper and Spaghetti type stuff.. not my favorites but needed this week)

Mandy, I had to Google Sweet Fire Chicken because I'd never heard of it. Looks delicious! Is it similar to General Tso' s chicken? Which copycat recipe do you use? TIA

Tu - Amish chicken casserole, salad
W - bourbon chicken, salad
Th - ground beef stroganoff, salad
F - honey lime chicken, rice, veggies
Sa - butternut squash shepherd's pie, salad

Dinners
Monday-Hamburger gravy and rolls, veggie (Earl doesn't care for this but has class tonight...kids have been asking for it). I'll eat leftover low-carb pizza from Saturday.
Tues-Pork and pinto bean carnitas, tortillas, all the fixings (sour cream, cheese, salsa), tortilla chips
Wed-Kids eat at church
Thurs-Cheeseburger Pie, rolls for kids
Fri-Roast chicken, sweet potatoes, asparagus
Sat-Chicken enchiladas, beef soft tacos, chips, salsa
Sun-Eggroll in a bowl with either quinoa or rice
Lunches-I'm letting kids eat at school 1-2 times per week. Rest of the time they take a sandwich, veggie, and fruit, occasionally chips, and a low-sugar juice drink.
My lunches-Salad with salmon, salad with chicken, protein shake, leftovers
Breakfasts-kids can eat this at school for free, aside from Max. They can always opt for yogurt, cereal, toast, or boiled eggs at home instead, and Max usually eats some combination of those or I make us scrambled eggs.
My breakfasts-THM pancakes (using cottage cheese, egg whites, and oat flour), protein shakes, scrambled eggs with veggies, omelet, boiled eggs, crepes, etc...
Snack list for this week:
Cheese sticks
Chocolate milk
Veggies with peanut butter or homemade Ranch (veggies are cut up in fridge and ready to go)
fruit (currently nectarines, apples, bananas, and blackberries)
Crackers and cheese
Yogurt with or without fruit
Pepperoni sticks
Popcorn
Nuts

Edited to add: I made the cauliflower alfredo tonight, and it was a good substitute, but I think that this recipe calls for wa-a-a-ay too much garlic (and I love garlic!). Also, I followed the note at the bottom and added some parmesan cheese.
