You girls are on top of it!!

I have today planned:
Aug. 1: Tuna Zucchini Cakes, Fresh Green Beans (leftovers), Corn on the Cob, Brown Rice.

Ta-da!!   LOL!

It always seems to surprise me every month when I need to flip the calendar page!  Not sure how it sneaks up on me like that!  I will see if I can grab some time to menu plan today, because I really feel better and in more control when I have that at the ready!

I've been doing just a week at a time, and it's going well!  This week is:

M: Chicken Mole*
T: Beef & Broccoli w/ Rice
W: Crockpot Chicken & Noodles
R: Enchilada Skillet
F: L/O (Jean out)
Sa: L/O (Jean out)
Su: Lasagna w/ Garlic Bread

* Soooooo, this was gross.  I followed the recipe in the Family Feasts for $75 a Week book, which included the instruction to 'cook the spices for 4-6 minutes until blackened and smoking'.  Well, they definitely tasted - and the whole house smelled - like they were blackened and smoking!  And that was after only about 2 minutes of scorching them!  Jean was still on his way home, so I went into problem solving mode and placed a pickup order at Dominos.  BOOM!  Delicious :).  Of course Jean said the mole was 'not that bad', and was happy to take it for lunches a few times this week, so it didn't completely go to waste (even if I thought it smelled and tasted like an old, burned cigar!).
