Catherine, do you have a recipe for the cauliflower crust? I am trying to reduce my carbs.

Steam a bag of frozen cauliflower or the equivalent in fresh.  I "mush" it in a clean dish towel to get out excess moisture and chop it into small bits.  Mix in a couple cups of mozzerella cheese, 3 eggs, and any spices (usually oregano for me) and pat out onto a parchment covered cookie sheet or pizza pan.  Bake at 400 until golden.  Peel off parchment and flip crust, then top and broil to heat toppings and melt the cheese.

How do you like this as a replacement for regular crust?   

Well, Earl and I both like it very well.  My personal favorite pizza restaurant crust is thin and crispy and this is not at all like that.  But it's good and chewy, very little cauliflower taste at all.  We do not eat low-carb all the time, but this recipe is delicious enough for me not to miss "regular" pizza and allow me to skip the blood sugar fluctuation that the regular crust gives.

Can't wait to try this.  I used to make 'fauxtatoes' when I was doing low-carb and I love cauliflower.

I'm thinking it's catfish.   Without unloading the chest freezer I'm not 100% sure though.   ::) I may have a trout or two in the garage freezer that Aaron caught.  I'll have to go out there and see.  Hmmm.....

I'll fry fish and hushpuppies, make slaw and bake potatoes. 

I have to have fish when Aaron's working though.  The smell of hot grease makes him sick on his stomach and he does not like fish so I save that meal for a weekend when he works.

Fish bones scare me with little kids.  Lainey and Holden will eat the catfish since it's filleted (how do you spell that??  That doesn't look right  :-\) and Sam will eat the trout since it's got bones.

They're salmon patties made with left over mashed potatoes.  Sam likes the a lot better than plain salmon patties...the salmon taste isn't as strong. 

Here's the recipe that I use but I make a few changes (like I do with any recipe  ;))

Well I don't use parsley or chives, I just use regular onions.  Sam likes his food spicy so I will add some hot sauce or red pepper flake.  I sometimes add bell pepper or worcestershire sauce. 

I don't make big changes, just some seasoning changes.

I've never tried it with anything but salmon so I'm not sure about chicken.  Try it and see what you get and then report back.   :D
