February Menus

2nd-8th

Mon-Vegetable Lo Mein with ramen noodles and homemade egg drop soup

Tue-CP pork chops with cream soups and ranch, mashed potatoes and steamed broccoli

Wed-Lasagna soup with garlic bread

Thu-Pork riblet patties with deli buns and bbq sauce and shells and cheese

Fri-Burgers with French fried onions on top, fries

Sat-cheese Ravioli with plain sauce, garlic bread and green beans

Sun-Butterfly shrimp and we are not sure with it yet? MIL gave it to us for a treat.

Monday 9th- Sunday 15th-



Monday- Chicken leg quarts, mashed potatoes and corn

Tuesday- Spaghetti with meatballs, Broccoli. garlic bread and salad

Wednesday- Steak um cut up and cooked with peppers and onions rolled up in tortilla's, chips

Thursday- Hot dogs and French fries

Friday- homemade Stromboli

Saturday- Valentines day. Have red velvet pancakes and bacon for breakfast. Dinner is steak, Shrimp Cocktail, baked potatoes, green beans and salad. And I will make some kind of dessert.

Sunday- Cooked potatoes with kielbasa peppers and onions with green beans on the side.

Maleesa, I love strombolis, but have never made them.  Most of the recipes I have seen for them seem time consuming and I didn't even have most of the ingredients.  Is your recipe any easier?  Would love to make them.

LOL, My son has been asking me to make stromboli (I am not sure why.. he has never had it) but I would love the recipe too!

My menu for this week will be pretty simple. Not necessarily in order:

vegetable soup with drop biscuits
spaghetti with french bread
bbq beef sandwiches
cheesy chicken and noodles
beef and rice

Stromboli Recipe

Dough:
1 1/2 cup barely warm water
1/3 cup sugar
1 tsp. salt
1/4 cup dry milk
4 cups flour
2 tsp. active dry yeast

Put all ingredients in bread machine pan in the order given. Select dough setting.

Divide dough in half. Roll each ball of dough into a 10x14 inch rectangle.


Filling:
pizza sauce
2 cups or more of shredded mozzarella cheese
Pepperoni

Top each rectangle with pizza sauce, mozzarella cheese and pepperoni. Bring each long side of the dough to the center. Seal the seam with your fingers. Fold each end of dough over and seal. Place seam side down on greased cookie sheet.

Egg mixture:
1 egg, beaten
4 Tablespoons melted butter
2 Tablespoons grated Parmesan
1-2 teaspoons garlic powder

Mix together in small bowl.

Dried oregano

Brush each Stromboli with egg mixture. Sprinkle with dried oregano.

Bake at 350 degrees for 30 minutes.

Remove from oven and let cool for 10 minutes before slicing. If your in a hurry defrost a frozen loaf of bread and let thaw and roll it out.

Egg Drop Soup

1 Quart - Chicken Broth
4 Eggs
1 tsp - Soy Sauce
1 tsp - Corn Starch
2 tsp - Water
1/4 tsp - pepper
1 - Green Onion (chopped)
 

In a pan combine broth soy sauce and pepper.  ( optional for the soy sauce)
Bring to a boil over medium heat. Combine corn starch and water to make a slurry and pour into the simmering broth to thicken slightly.
Beat the four eggs thoroughly and slowly drizzle back and forth into the broth. With a spoon lightly move the broth back and forth to prevent the eggs from clumping together.
Garnish with green onion. I use more corn starch and water. I just make it to how thick I want it.

Vegetable Lo Mein with ramen noodles -

I don't really have a recipe for this. Take how many packet of ramen noodles you would like. I use 2 for 4 of us. I let them soak in the hot water until absorbed as much as they can. I usually do it a couple hours ahead of time and leave them in the microwave.
In a pan I sauté 1/2 bag of carrots and peas, green onions, or yellow onion, mushrooms, celery sliced thin. You can what ever veggies you want or what ever you have on hand. Add in the noodles and stir. Just taste as you go so it does not get salty. You don't have to add in the seasoning packets if you don't want to. I like the extra flavor from them so I add them first and mix in with the noodles and then add the soy sauce and oyster sauce to taste. Add in some oyster sauce or soy sauce or a little of both and the seasoning packets from your ramen noodles. I use shrimp or oriental noodles. But in a pinch I have used chicken flavored ones also and they were fine.

Here's an idea, Erica.  Since you'll be making them anyway, why not just whip up 10-12 extra and send them over to this culinarily challenged chick! LOL ;) :)  I think I made up a new word there. :D

No certain order

 

1. Beef tips and gravy over noodles, potato salad, bread and butter.

2. Burgers with fries.

3. Cheese ravioli with pasta sauce, green beans and garlic bread.

4. Crockpot pork chops with cream of mushroom soup and a packet of ranch dressing mix, mashed potatoes and broccoli.

5. Meatball soup, something on the side?

6. Chef salads.

7. Steaks, baked potato skins and green beans
