February Menu

I have made my menu for February. 

I'm still trying to stretch those grocery dollars as far as I can by using up what's in our freezers and pantry.  Sometimes this doesn't make for exciting meals, but hey, it's food and I'm not going to complain. ;)

1.  Tomato soup, grilled cheese sandwiches

2.  Rice stuffed peppers with pasta sauce, squash casserole

3.  Southern-style neckbones, corn, and okra

4.  Chicken & dumplings casserole

5.  Pork chops, broccoli, mashed potatoes

6.  Tossed salad

7.  Pizza

8.  Chicken fingers, oven fries

9.  Crockpot pork roast, corn on the cob

10. Taco salad with homemade refried beans

11. Chicken noodle soup

12. Turkey burgers, baked potatoes

13. Tomato soup, grilled cheese sandwiches

14. Pizza

15. Steak fingers, mixed beans, cheesy squash fritters

16. Tuna patties, potatoes, corn on cob

17. Ham steaks, peas, steamed zucchini

18. Northern beans with ham, cornbread, cabbage

19. Meatless chili

20. Leftover chili (I always make a huge crockpot of this)

21. Pizza

22. Grilled cheese, tomato soup

23. Loaded baked potatoes, salad

24. Breakfast for supper

25. Egg rolls, vegetable stir-fry

26. BBQ pork roast

27. Leftover bbq pork for sandwiches

28. Pizza


This will use up the meat that's left in the freezer except for the remainder of the pork we bought in the fall.

Cheryl - Your menu looks good!

I made my menu for February.  I should have a bit more money for food for February but still want to keep some back in case of another slow month like this one.  Because of that, I may not be able to buy everything on my shopping list for the month but can make most of this from what I can buy and what I already have.  Molly's stomach has really been bothering her so I had to consider that when I did the menu.

 1 - BBQ chicken, baked potatoes, veggie
 2 - Super Bowl party - we are going to my SIL's
 3 - eggs, potatoes, biscuits, fruit
 4 - meatloaf, mashed potatoes, fruit
 5 - potato and corn chowder, bread
 6 - ravioli, salad, garlic bread
 7 - peanut noodles
 8 - tuna melts (Molly will just have a tuna panini with no cheese), oven fries, fruit
 9 - minestrone, bread
10 - waffles, fruit
11 - pasta in a pot, bread
12 - pork chops, potato, veggie
13 - refried beans, tortillas or tortilla chips, cole slaw
14 - crab cakes, twice baked potatoes, veggie
15 - take out - pizza/wings - I will make a salad and oven fries
16 - soup, bread
17 - eggs, potatoes, fruit
18 - chicken, potatoes, veg
19 - pasta with salmon and peas, veggie, bread
20 - veggie potpie stew, sweet potato biscuits
21 - baked beans, cole slaw, cornbread
22 - turkey, stuffing, mashed potatoes, veggie
23 - cheesesteaks, oven fries
24 - sausage with peppers and onions, mashed potatoes, veggie
25 - waffles, fruit
26 - pasta with leftover sausage and peppers, veg, garlic bread
27 - tuna melts, oven fries, fruit
28 - corn chowder, bread

I use the dates just so I know I have enough meals planned for the month.  I won't necessarily have each meal on the specific date listed and, sometimes, I have a change in plans completely and either skip a meal for something that month or have an opportunity to either eat out or at someone's house.  This is a good place to start, though.

Denise, how do you make your tuna melts? I know some people make theirs differently so I'm just interested in how you do yours! :D

I make the tuna melts a few different ways but always call them a tuna melt!  Sometimes I make it as if I were doing a grilled cheese and then put tuna in it.  Other times, I do them on buns, open faced and in the oven.  Lately, I have been using my panini maker and also using homemade bread to make them.  Since Molly can't eat cheese right now, it is the easiest way and her sandwich doesn't look all that different from the rest.  Plus, I can make four of them in less than 10 minutes.

Both your menus sound delicious!  I am working on mine but nowhere near done.  Might work on that tonight with Earl at class.  I am not a huge fan of tuna but now I think I'll put tuna melts on my menu.  My mom always made them like tuna salad minus the pickles, then put a slice of cheese on top and toasted it along with another slice of bread to put on top (or leftover hamburger buns).  I  need to think of how to tweak this to make it my own.

Funny my tuna melts (or what I call a tuna melt, ha) are very simple. Since I have to cook for 6-7 people. I take a sheet cake pan put bread slices covering pan like 2 wide and 4-5 long cant remember. I mix tuna, miracle whip and million dollar relish and put on each piece along with 1-2 slices of cheese, bread again and put in oven sometimes with foil if I remember and bake for 20-30 min until toasty and waRM. Easy and cheap. I usually make during lent alot.

I have already made two changes to my menu!  My girlfriend works for a catering company and gifted us some food earlier this month.  I froze half of it for a later time so I will be having penne a la vodka one night and chicken marsala another night.  I am not sure what I am removing yet,

Cheryl - I would gladly share my recipe if I had one!!!  I make a corn chowder that I found on the Pioneer Woman's website and plan on tweaking that a bit to make it a bit different.  I may also add either chopped clams or bay scallops to make it a seafood chowder.

Denise - ok, thanks!  You sound like me.  I usually find a recipe I like and tweak it to fit my family's tastes.
