Funny coincidence, but I was looking on Amazon yesterday or Friday for a certain cookbook I have used a lot from our libary (Good Cheap Eats) just to see what it would cost to buy, and the Budget Bytes one came up.  Our library doesn't have it but I requested an interlibrary loan to borrow and look through it.

I don't exactly have a plan but I know every day will come from the freezer again this month. Today I made tater tot casserole with lemon dessert. My college kids came home for the day and one is sick so I also made chicken rice orzo soup. It was so good and everyone took a bowl prior to the entree. Kind of like a restaurant where you get a bowl of soup first then the meal and lastly dessert. There was enough for her to take serving back for tomorrow. Brownies were another request for sharing with the dorm kids. I had everything in the freezer to make all the meal items today. I found a package of bratwurst so that will be served this week sometime. I'll wing it each day but it won't be hard because I know one day will be brats, another day meatballs, soup will be another day and by the time we progress into the week, I'll have other ideas going.

Sorry!  Just seeing this.  Both are Pinterest recipes (of course), that I adapt to work with our tastes.

Buffalo Chicken Lasagna
http://www.ayearofslowcooking.com/2008/10/crockpot-buffalo-chicken-lasagna-recipe.html?m=1 (http://www.ayearofslowcooking.com/2008/10/crockpot-buffalo-chicken-lasagna-recipe.html?m=1)

I got the idea from this recipe, but I basically just layer wing sauce (we like Sweet Baby Ray's), lasagna noodles, cooked chicken, and a cheese mixture (mix together: cottage or ricotta, grated parmesan, mozzarella or cheddar, and blue cheese crumbles) in the Crock*Pot.

Crock*Pot Steak Soup
http://www.recipesthatcrock.com/crock-pot-steak-soup/ (http://www.recipesthatcrock.com/crock-pot-steak-soup/)

This is our new favorite, and I'm making it nearly once a week!  I just sue whatever steak/beef cut I have in the freezer or is on sale at the time.  Also, instead of using egg noodles, I add tortellini noodles to get that little hit of cheese :)

Enjoy!  I will also write these out in the recipe section.

Mandy,

Do you skip the red sauce then? The actual recipe shows the red sauce but you don't describe yours with it so I'm guessing your variation doesn't contain it.

Correct!  I don't use it. Just the wing sauce and cheeses.  If it seems like it needs more liquid other than the bit of water added at the end, I will sometimes thin the cheese mixture with some blue cheese salad dressing. :)
