Hi everyone,

It's been a long week. Not a bad week but just long and difficult. Our daughter went back to Honduras to teach for this next school year. It's nice having our daughter home but her life is there. It's always hard to say goodbye. But next weekend we welcome our other daughter back home for only a week before she heads to her new home in Ohio to start her Master's program and be with her boyfriend and his family. He has already completed his Master's degree and is working FT so I'm hoping she can find some kind of work as well. I'm not worried.

Back at home, we then have our son that stays with us only part of the week and the other part he lives closer to his weekend FT job. So we have four days with three of us and three days just the two of us.

My plan is to work through the freezer (I think I say that all the time!) but dad and mom gave me a lot of green beans this week and I have about 14 quart sized bags full.  I know there are lots of goodies in that freezer to make some good food! I remembered a recipe mom used to make when I was growing and we kids loved it--hamburger BBQ using a can of chicken gumbo soup, a squirt of ketchup, a squirt of mustard and some brown sugar. I have made that for my kids and they loved it. So we had this one day this week only I didn't have a can of chicken gumbo so I used a can of chicken and rice and that was super good as well.  We have had simple but good old fashioned recipes this entire summer. Meatloaf, tater tot casserole, pork stir fry, enchiladas, roast chicken, roast beef, hamburgers.  All of these brought me back to my childhood and these are meals I raised my kids on.

I will need this weekend to be a lazy one. I feel like I was plateaued and then fell. I'm super tired, my back aches, I'm just not myself. But I have been active getting my daughter ready to leave and then the early morning airport arrival along with a full day, then a volunteer night the same day just didn't give me enough rest.
