Hi everyone,

Did everyone go on Labor Day vacation? Not too many of you around these days.

It's been crazy busy and stressful in my life. I won't talk about it right now but will in a while.

We've been really attempting to use the goodies in the freezer. I don't buy hardly anything right now because:
1. it's too expensive and I'm talking about meat and
2. there's a lot in the freezer to work through

I found a container of chicken stock in the freezer (I see more in there) the other day and made a really good pork chops/rice in the IP. I also used some of the stock for crunchy taco casserole. My son said the pork chops were really, really good. I also don't love pork chops because they can be so dry but these were really good.

I used a 2nd container of stock for chicken noodle soup last night since son is fighting off a sore throat and cough. They really liked the soup also. I honestly don't know how long it was in the freezer because it was way down in the bottom.

This past weekend I dove in the freezer to find some blueberries to make some blueberry jam. I also had some plums from Aldi that were not ripe when I got them and they never did ripen. They were not sweet and were starting to spoil. I saw a small bag of dried apricots in the pantry and decided to make a mixed fruit jam. I needed a bit more fruit so I added in some fresh peaches. I went heavy on the fruit and added more than what the recipe called for. I pretty much used the pectin package instructions as a guide and guessed the rest.  It turned out beautifully and tastes delicious. I love a dollop of jam in my oatmeal in the morning.

I didn't care for the fruit at Aldi so I'll be careful not to buy seasonal fruit there again. Apples and grapes and bananas are fine.

My dad gave me a bag of tomatoes yesterday so now I will work on those to remove the skins and then freeze those as well. But my freezer is still full. Mostly it is new veggies from this year's garden harvest: beans, cabbage, tomatoes. I think there is a lot of chicken broth down towards the bottom and I thought there was more blueberries down there but I could only find one box. My mom gave me some frozen slices of cooked beef. She said dad didn't like it so I she gave it to me. I'm not one to throw food away so we'll just see what I can do with it. I'll probably do something with it in the IP to make it nice and soft.

Tonight we'll have leftovers which would be chicken noodle soup, crunchy taco casserole and some rice and pork chops. A little bit of everything and not enough of anything.

I just might make a cheesecake in my IP this weekend. It will be our anniversary next week and I have some old graham crackers in the freezer that I want to use up. So the crust is the graham crackers and I have 2 cream cheese block in the fridge ready to go and I have all the other ingredients. Maybe some blueberry jam or the other fruit mix jam for a topping and we have our anniversary dessert!

I'm looking forward to a long weekend. I really need it. I'm feeling very tired from stress and I think the ticket is rest.
