coconut milk?

I have found a can of coconut milk in my pantry and I can't remember why I bought it.  I'm sure there was a recipe I wanted to try.   Any suggestions?

We do a curry stew with it.  You put the milk in the crockpot, add a TBSP of curry powder and whisk it all together.  Then add carrots (cut up or baby ones) and chunked peeled sweet potatoes along with some meat such as boneless chicken thighs or stew beef.  Oh, and an onion cut into strips.  Toss everything to coat, then cook on low in the crockpot for 6-8 hours.

My grandmother used to make an amazing coconut cake every year at Christmas just for me, because I love it so much.   I am pretty sure she substituted coconut milk for regular milk.  I know they say that if you do that it makes the cake more moist.

I've done a baked chicken dish with coconut milk but I would have to look for the recipe.
