Decembe Menu

sitting working on my December menu right now.

I was hoping to grocery shop today but I think I will save it for tomorrow when I have a better game plan.

I haven't gotten very far but here is what i have so far:

Thursday  3 - french onion soup and mozzarella panini's
Friday 4 - leftover soup and pizza

off to finish - I am hoping to do the whole month today

I wrote down some menu ideas a few weeks ago and have been working off of it.  Here is what I have, in no particular order, for the next few weeks:

Steak, potatoes, veggie
Fish tacos, cole slaw
Sweet potato and black bean burritos, veggie
Chickpea piccata, mashed potatoes, veggie
Homemade pizza, salad or veggies and dip
Egg biscuits, potatoes, fruit
Lentil soup, bread
Tuna melts, oven fries, veggie
Baked potatoes, veggie
Salmon, rice, veggie
Black bean burgers, potatoes, veggie
Tomato soup or Creamy Tomato Tortellini Soup, grilled cheese or cheese toasts
Minestrone, garlic toast
Mushroom Spinach Lasagna, veggie
Ham steak, baked sweet potatoes, veggie
Chicken fajitas, veggie
Pasta with salmon and peas, veggie, garlic toast

I don't plan a specific veggie for each meal.  I just use whatever I have in the freezer or what I grabbed at the produce store.  The sweet potato and black bean burritos could change into a chili or something else similar.  It depends on my mood when I am cooking that day.  😊

Of course, I have all of that food in the house and we ate out tonight.  🙄  It was just three of us and I didn't feel like cooking after all of that food shopping I did the past two days.  😃😃😃

Here's my plan for the next 2 weeks.

Mon. Dec. 21: chunky veggie chowder, garlic bread, green salad, fruit
Tue. Dec. 22: homemade Cafe Rio (pulled sweet pork barbacoa, cilantro lime rice, black beans)
Wed. Dec. 23: pot roast with vegetables, rolls, green salad, fruit
Thurs. Dec. 24: Christmas Eve with in-laws.  Need to discuss what my contributions will be with MIL.
Fri. Dec. 25: Christmas!  Ham with raisin sauce, au gratin potatoes, dilly lime carrots, roasted broccoli and garlic, Christmas jello, walnut cheese spinach salad, yule log with ice cream.
Sat. Dec. 26: Christmas party with MIL's side of the family.  We are having haystacks so I need to look at the contributions list and choose a few things to bring.
Sun. Dec. 27: roasted chicken, rice pilaf, green beans, honey glazed carrots, cranberry almond lettuce salad
Mon. Dec. 28: broccoli beef, rice, egg drop soup, chow mein noodles, fruit
Tue. Dec. 29: fish tacos, southwestern salad, fruit
Wed. Dec. 30: chicken fajitas, spanish rice, refried beans, fruit
Thur. Dec. 31: New Year's Eve!  Will buy a bunch of appetizers from Costco and that'll be our dinner.  We did this last year and it was fun!  We got enough that we had leftovers for lunch the next day. :)

M 28: Chicken Enchilada Skillet
T 29: Beef w/ Broccoli & Rice
W 30: Lasagna Skillet
R 31:  Fry Night (we got a deep fryer!)
F 1: Black-Eyed Peas & Ham over Rice
Sa 2: Taco Salads
Su 3: Hot Sausage & Egg over Noodles
