I've been working on the meal plan for January and this is what I have.  Since I am only using meats we already have in the freezer, I can swap meals if I decide I'm not in the mood for a certain food on a given day.  Sides will be vegetables from the freezer, pantry, and/or garden.

1. Pizza
2. Taco salad
3. Fried chicken thighs, green beans, mashed potatoes
4. Hotdogs and baked beans
5. Breakfast foods
6. Italian sausage, peppers & onions
7. Chicken & broccoli casserole
8. Pizza
9. Ground beef fajitas on homemade tortillas
10. Spaghetti, garlic bread, and salad
11. Smoked sausage & beans
12. Chicken fried rice, homemade egg rolls
13. Sausage crescent rolls
14. Crock pot roast with carrots, onion, and potatoes
15. Pizza
16. Chicken fajita salad
17. Smoked pork loin
18. Soup & sandwiches
19. Loaded baked potatoes
20. Hamburgers, fries
21. Cube steak with mushroom gravy
22. Pizza
23. Nachos
24. Chili
25. Roasted turkey breast, stuffing, potatoes
26. Pork chops
27. Slow cooker beef & broccoli
28. Chicken pot pie
29. Pizza
30. Tacos
31. Potato soup

This month is going to be interesting because I'm going to be cooking using what's in my freezer and pantries, since the freezer needs to be defrosted.

Jan 1:  baked potato cheddar soup, breadsticks, fruit
Jan 2: pot roast with vegetables, rolls, green salad, fruit
Jan 3: roast chicken, rice pilaf, green beans, honey glazed carrots, cranberry almond lettuce salad, fruit
Jan 4:  spaghetti, green salad, garlic breadsticks
Jan 5: chunky chicken noodle soup, biscuits, fruit
Jan 6: chili lime shredded beef tacos, mexican rice, refried beans, fruit
Jan 7: chicken pot pie, green salad
Jan 8:  jambalaya, rice, fruit
Jan 9:  lasagna, green salad, garlic bread
Jan 10:  fish tacos, southwestern salad, fruit
Jan 11: chicken parmigiana, green salad, garlic bread, fruit.

That's as far as I've gotten.

You girls' menus look good.  I too am trying to use what I have on hand and trying to limit what I have to buy.

6 -- Out to Dinner with friends
7 -- Apricot Ginger Chicken, Rice, Green Beans

10 - Grilled Ham & Cheese Sandwiches, Vegetable, salad
11 - Baked Spaghetti, Veg, Garlic Toast
12 - Slow Cooker White Bean Soup
13 - Korean Beef, Rice, Broccoli
14 - Cheesy Taco Casserole
15 - Leftovers
16 - Out to Dinner with friends
17 - Vegetable Lo-Mein
18 - Ravioli Lasagna
19 - Beef Vegetable Barley Soup
20 - Burrito Bowls
21 - Breakfast for Dinner
22 - Homemade Pizza
23 - Burgers and Fries or Baked Potatoes
24 - Chicken Stir Fry
25 - Turkey Breast, Mashed Potatoes, Gravy, Corn
26 - Turkey Pot Pie Soup
27 - Baked Tilapia
28 - Steak Fajitas
29 - Leftovers
30 - Chili
31 - Cashew Chicken

Hoping to stick to this menu as close as possible to avoid last minute "let's just go out and grab something"!!

Tweaked the menu for the next 10 days.

Jan 11: broccoli beef, rice, egg drop soup, chow mein noodles
Jan 12: fish tacos, southwestern salad, fruit
Jan 13: chicken pot pie, green salad
Jan 14: baked pork chops, mashed butternut squash, peas, green salad
Jan 15: chili lime shredded beef tacos, mexican rice, refried beans, fruit
Jan 16: baked potato cheddar soup, breadsticks, fruit
Jan 17: roasted chicken, rice pilaf, green beans, honey glazed carrots, cranberry almond lettuce salad, fruit
Jan 18: lasagna, green salad, garlic bread
Jan 19: teriyaki pork roast, mashed potatoes, peas, corn, green salad, fruit
Jan 20: chunky chicken noodle soup, biscuits, fruit

I am out of town this weekend for work, so I'm doing a bit of extra prep snack-wise and pulling out a few freezer meals for Jean.  He's painting our kitchen cabinets while I'm gone, so I want to make sure that: A) He's well-fed, and B) He doesn't need to do much to prepare a meal, since I imagine the kitchen will be a mess! So...

M: Buffalo Chicken Chowder
T: Puff Pastry Sandwiches
W: Dill Pickle Soup
Th: Creamy Lemon Chicken Piccata
F: Lasagna (freezer meal/already made)
Sa: Enchiladas (freezer meal/already made)
Su: One of the Crock*Pot freezer meals I already have.  I will take it out on Friday and then Jean can put it in Sunday morning so it'll be done by the time I get home.

Ok Mandy you had me at dill pickle but what is your recipe for the soup? Also your puff pastry sandwiches and buffalo chicken chowder! Sounds yummy! See why it is fun to see what everyone else is doing. Sounds boring when we type what we have going but to someone else it is interesting!!!

We're almost to the end of the month and it has been a successful freezer meal menus for us!

Everyday there was some kind of deliciousness coming out of that freezer. Last night was chicken yakisoba and chicken thai soup (lunches for the rest of the week). We've had meatloaf, mashed potatoes, green beans, mixed veggies, tenderized pork cutlets, a small beef roast cut in half for two roasts during the month, a pork roast, stir fry, baked chicken, chicken soup, pea soup and so much more. We've had breads, french toast, bagels, jelly, raspberries, strawberries, pudding, frozed whipped topping, banana muffins, corn bread. All of this from the pantry and freezer.

I was thinking of getting groceries after work today but I think I really need to wait until Saturday. We sure need some fresh refrigerator items but we'll make due for a few more days.

Ooooh...don't really have one that I use now, but I must've gotten the idea from this recipe I pinned years ago:

Now, I just layer lasagna noodles, wing sauce, shredded chicken, and cheese mixture (cottage cheese, mozzarella cheese, blue cheese, parmesan cheese) in my Crock*Pot.
