June menu

I've been working on my meal plan for June.  I sat down with my freezer inventory and planned my meals using the meats on hand.  Sides will mostly be fresh vegetables from the garden.  I hope to keep my shopping to a minimum.  Monday night meals need to be quick & easy because we will be going to the library for summer reading program.  Friday is pizza night and Saturday is Mexican food night.  It makes things a little easier to plan.

Hamburgers, baked beans
Pork chops

Chicken fajitas, avocado dip
Smoked pork roast
BLT sandwiches, chips, dip
Chicken broccoli casserole
Pasta salad
Turkey with gravy, green beans, potatoes

looks great Cheryl!

I too am hoping to get my meat from the freezer this month.   I am going to go deep freezer diving tomorrow and get an inventory.  I know there is some stuff that needs to be tossed so I will do that tomorrow too

I may "steal" some of your meals Cherly  ;)

fiesta lime grilled chicken, spanish rice, refried beans, root beer floats (wedding anniversary!)

I am hoping less scary

Also I am hoping for A LOT of meat in there  ;)

I'll post these in the appropriate recipe section too but here are the requested recipes:

Fiesta lime chicken (serves 6):

6 chicken breasts
1 cup vegetable oil
1/2 cup fresh lime juice
1 Tbs salt
1 tsp paprika
2 tsp crushed oregano
2 tsp onion powder
1 1/2 tsp cumin
1 tsp garlic powder

Whisk together oil, lime juice, salt, paprika, oregano, onion powder, cumin and garlic powder. Pour over chicken and refrigerate at least 2 hours, up to overnight. The longer the better.

Remove chicken from marinade about 10-15 minutes before grilling. Heat grill and grill chicken until done, about 12-15 minutes depending on how thick your chicken is.

Cafe Rio pulled pork:

1 cup salsa
1 cup brown sugar
1 cup lemon lime soda
3 lbs pork (I like pork shoulder)

Put pork in crockpot.  Stir together salsa, brown sugar and soda.  Pour over pork.  Cook on low for 8 hours.  Shred.

Lime cilantro rice:

3 cups cooked white rice
1 cup loosely packed cilantro
1/2 cup chopped white onion
1/4 cup chopped green onion
1 1/2 tablespoons lime juice
3/4 teaspoon salt
1 teaspoon olive oil

Pulse cilantro, onions, lime juice, salt and oil in blender, scraping down the sides as needed, until well combined.  Fold mixture into warm rice.

Cilantro Ranch Dressing (great for pouring over the pork--makes great tacos, burritos or a salad)

1 packet Hidden Valley Ranch Buttermilk dressing mix
2 tablespoons salsa verde
dash Tabasco sauce
1/2 bunch cilantro
2 cloves garlic
3/4 cup mayonnaise
3/4 cup sour cream
1/2 cup buttermilk
juice of 1 lime

Blend all in a blender.

Monday 6 - pasta with meat sauce
Tuesday 7 - garlic mashed potatoes, green beans with shallots and chicken (cooked from Sam's club)
Wednesday 8 - sausage with asparagus


I have not done a plan yet but thought I would put down what we actually did eat   ;)
