Freezing ground green tomatoes
« on: September 29, 2016, 09:36:42 AM »
One of my canning projects this year is to make green tomato relish.  I have an order in at my local farmers market.  I don't know when I will get it.  My friend gave me some green tomatoes from her CSA box.  I'm pretty sure there aren't enough for making the relish.  Can I grind and freeze the tomatoes while waiting for the farmer's market box?  Then use the frozen tomatoes with the fresh-ground to make the relish?

thanks
Merilee

I've never tried it with the green tomatoes, but I do freeze ripe ones and can them into salsa or spaghetti sauce when I get enough.  I've also frozen peppers and then used them in canning recipes, so it would probably be fine.
