German Pancakes - or affectionately called GP Cakes in our house

1 Cup flour
1/2 tsp salt
6 beaten eggs
1 cup milk
1 stick of butter

Melt butter in a dripper pan (I use my roasting pan) in the oven at 450F. Mix eggs, salt, milk, and flour in a bowl and pour onto melted butter.  Bake for 20 minutes.

It puffs up a lot!  It's great with syrup, jam, powdered sugar or anything you'd want on french toast.

Belgian Waffles (yeast raised)

1 cup warm water, divided
1 Tbl yeast
3 eggs at room temp - to bring up temp, place in hot water for 3-5 minutes.
1 cup warm milk
2/3 cup sugar
1/2 cup melted butter
1 tsp vanilla
1/2 tsp salt
3 cup flour

Place 1/2 cup of water in bowl and sprinkle with yeast and a little sugar.  Let stand 10 minutes or until foamy. 

In large bowl, whisk eggs.  Add remaining water, milk, sugar, butter, vanilla, and salt. Add yeast mixture.

Slowly add flour and whisk until blended and smooth.  Cover and put in warm place until doubled in size (about 1 hour)  Or put in fridge over night in a very large bowl.

Place about 1/2 cup of batter into each section of the waffle iron.  Cook 1-2 minutes or until crisp.
