Crockpot Pork Chops & Gravy

4 thick, bone-in chops
1 envelope onion soup mix
1 1/2 cup chicken broth
1 (10.5 oz) can cream of chicken soup
1 envelope pork gravy mix

Place chops in crockpot.  Mix onion soup, chicken broth, cream of chicken soup and gravy mix together.  Pour over chops.  Cook 6-8 hours on low until very fork-tender.


Crockpot Beef Stew

2 lbs. stew beef
1/4 cup flour
1 t paprika
4 large carrots, peeled and sliced into 1/2 inch pieces
3 large potatoes, peeled and chopped into chunks
1 cup beef broth
1 1/2 tsp. salt
1/2 tsp. pepper
1/3 cup soy sauce
1 large onion, sliced
1 can tomato sauce

Layer potatoes on bottom of crock, layer carrots, then place meat on top of carrots.  Sprinkle meat with soy sauce, salt, paprika, pepper, and flour.  Layer chopped onions.  Combine broth with tomato sauce and pour over contents of crock.  Cover and cook on low 7-8 hours.

Crock Pot Macaroni and Cheese

Oil spray
2 cups  milk
1 (12 oz.) can evaporated milk
1 egg
1 tsp salt
1/4 tsp. pepper
1 1/2 cups shredded cheddar cheese (or any type you like)
2 cups uncooked macaroni

Directions:
Spray the pot of the slow cooker or if using a liner bag, spray the bag well. In a mixing bowl whisk together milk, evaporated milk, egg, salt and pepper. Pour milk mixture into the crock pot. Add cheese and uncooked macaroni. Stir gently to mix.

Turn slow cooker on low and cook 3-4 hours, or until the custard is set and the macaroni is tender. (Do not cook more than 4 hours, or the sides will begin to dry out). Serve at once.

If you serve it closer to the 4 hour mark, the top and sides will get more crispy.  If you like it completely soft, serve at the 3 hour mark.

thanks for that link Shelly!  There are some amazing looking recipes on the site. I just sent the link to ddAmanda who has a completely gutted kitchen and is looking for some new crockpot recipes during their renovations.

Buffalo Chicken Lasagna
I got the idea from this recipe, but I basically just layer wing sauce (we like Sweet Baby Ray's), lasagna noodles, cooked chicken, and a cheese mixture (mix together: cottage or ricotta, grated parmesan, mozzarella or cheddar, and blue cheese crumbles) in the Crock*Pot.

INGREDIENTS
Uncooked traditional lasagna noodles
4 cooked chicken breast halves
Jar of prepared pasta sauce
1 cup buffalo wing sauce
3 red, yellow, or orange bell peppers
1 Tub of ricotta cheese (15 oz)
2 cups shredded cheese (mozzarella and cheddar blend)
1/2 cup bleu cheese crumbles
1/4 cup of water (add at very end)

DIRECTIONS
1) Use at least a 5qt crockpot, or cut back on the amount of ingredients.

2) In a large glass bowl, combine cooked and chopped chicken breast, the pasta sauce, and 1 cup of buffalo wing sauce.

3) Ladle a big spoonful of the sauce into the bottom of your crockpot. Cover with a layer of uncooked lasagna noodles. You'll have to break them to get a proper fit.

4) Add a smear of ricotta cheese to the top of the noodles. Add a layer of chopped bell pepper. Sprinkle on a handful of shredded cheese.

5) Repeat layers until you run out of ingredients.

6) Add the bleu cheese crumbles, if desired. Put the 1/4 cup of water into your empty pasta sauce jar and shake. Pour the liquid over the top of the entire lasagna.

7) Cover and cook on low for 6-7 hours, or on high for 4-5. When cooking time is complete, unplug and take off the lid of the crock.

8 )Let it sit for 20 minutes before cutting into.

Cafe Rio Shredded Pork

1 cup salsa
1 cup brown sugar
1 cup lemon lime soda
3 lbs pork

Place pork in crockpot.  Stir together salsa, brown sugar and soda.  Pour over pork.  Cover and cook on low for 8 hours.  Shred.

This makes great tacos, burritos or a salad.  Serve with lime cilantro rice and cilantro ranch dressing.  If you Google Images "Cafe Rio", you'll see lots of pictures of how they serve this pork (they call it barbacoa sweet pork).
