Carrots-ingredient of the day-11/26

How do you use carrots?

We eat them raw, diced in some soups, pot pie, or fried rice, and steamed in a blend with cauliflower and broccoli.  Very very rarely we eat them as a cooked veggie by themselves.

Carrots are one of our family favorite vegetables--especially cooked! I know, we are strange. Whenever we have meatloaf I always prepare cooked carrots with butter and brown sugar and mashed potatoes. We are having meatloaf tonight but I don't want to do mashed potatoes since we're having those on Thursday. And I might still do carrots though.  We eat carrots in stir fry dishes, raw and a real Dutch meal is cooking potatoes and carrots together and mashing them up together leaving some chunks but mostly mashed. Serve with butter. Mmmmm.

I decided not to buy a turkey after all. I just don't have the money for it right now. I do have two chickens thawing and a ham thawing along with mashed potatoes and plenty of sides and that will be Thanksgiving dinner for 11 people on Thursday.

My favorite way to eat carrots is cooked in the slow cooker with roast beef, onions, and potatoes.

I cook them in pineapple or orange juice, sometimes adding ginger.  We eat this as a side dish.
If you have it, you can add orange marmalade or apricot jam to them.

Oh! Oh!  I am currently using carrots as a moisture-absorber in my bottom veggie drawer.  They are turning a lovely shade of brown and taking on a supple softness.  How beautiful...  ;D ::)

Oh, I forgot to add that when we moved this summer so did the carrots in our refrigerator and there they sat for a long time. I finally had to do something with them (yes, they were still good). My dad grew lots of carrots in his garden so he gave us tons of those until finally we were swimming in carrots. One day I diced them all, parboiled them and froze a ton of carrots. That has come in very handy with meals lately.

In addition to the ways that have already been mentioned I like them roasted on an sheet tray w/ kosher salt and olive oil. I do not like the little baby carrots at all. They do not even roast like regular carrots.

I have eaten carrot salad with raisins before but have never fixed it.  That's not something my family would eat here at home but they would be polite enough to eat it somewhere else though.  :)

We eat carrots often.  I shred them to put in cole slaw, salad, pasta salads, stir fry and fried rice.  I also cook them in either a honey or brown sugar glaze.  I second roasting them on a cookie sheet in the oven.  Yum!  I also use them in lots of stews and soups.  And, of course, I serve them raw with homemade ranch dip.  I think carrots may be the vegetable I use most often.  It helps that they are also one of the cheapest to buy, too.
