I LOVE this recipe for homemade tater tots.  I have made them many times and have substituted grated squash to make squash tots.  :)

Tater Tots

serves 5, as a side dish

3 medium potatoes, finely grated and dried well

1/4 cup all purpose flour

1 teaspoon salt, plus more for serving

1/2 teaspoon black pepper

1/4 cup canola oil

 

Mix the potatoes with the flour, salt, and pepper. Form into 1” logs.

Heat oil in a large pot until it is so hot that dripping a drop of water on the surface immediately sizzles and spatters. Add tots and fry until all sides are golden brown.

Serve hot with extra salt and an endless supply of ketchup.

Guacamole
1 avocado, peeled and mashed
1 T lime or lemon juice
1/2 garlic salt

Peel and mash avocado.  Add lime or lemon juice and garlic salt.  Stir to combine.  For best flavor, refrigerate a couple of hours before serving.

Fresh Tomato Salsa
10 seeded roma tomatoes
2 (15 oz) cans diced tomatoes with chilies
2 onions
3-4 cloves of garlic
1/2 bunch fresh cilantro
1/2 jalapeno pepper
1/4 cup lime juice
1 Tablespoon white vinegar
1 Tablespoon sugar
2 Tablespoons salt
Using a food processor, chop cilantro with tomatoes.  Pour into bowl.  Next, chop onions, garlic, and jalapeno pepper together.  Add remaining ingredients.  Combine with the tomato/cilantro mixture.  For best flavor, refrigerate several hours or overnight.

Cucumber Spread
2 small or 1 large cucumber (unpeeled and grated)
1 small onion, grated
8 oz. cream cheese, softened
2 T mayonnaise
1/2 tsp seasoned salt
Squeeze out excess moisture from grated cucumber and onion.  Beat cream cheese.  Stir in remaining ingredients.  Add cucumber and onion and mix well.  Serve with crackers.
