Eggs-ingredient of the day-12/23/13

I forgot to do this yesterday, but maybe we'll take Sundays off.  I'm not always on before church then, anyway.

Of course, eggs go into so many baked goods, but I'm thinking here of uses as a main dish or side or at least as an ingredient in those.

-as themselves, fried, scrambled, baked, or boiled
-in omelets
-in frittata
-in quiche
-in egg salad
-in potato salad
-in fried rice
-boiled and sliced in chicken potpie--I don't usually do this but have had it that way and it's pretty good
-boiled and sliced or chopped on a salad
-scrambled ones mixed in with fried potatoes, cheese, and bacon bits as a meal

I feel like I must be forgetting something but that's all I can think of for now.

That is pretty much how we use them.  My parents went to Thailand several years ago.  They fixed us Pad Thai when they came to our place.  They use some scrambled eggs in that.

I think our favorite is the scrambled eggs with potatoes, cheese, and bacon.

Cath - do you have a good stir fry recipe to share

I make it up as a I go along, lol.  I cut (or slice) meat up fairly small, cook it in a bit of sesame oil (I like the flavor this adds, it is pricey but a bottle lasts a long time), then add veggies, usually frozen.  A couple of bags of a stir-fry blend, or else some asparagus, broccoli, carrots, etc... .  When it's mostly done, I put in a can of sliced water chestnuts, usually cut up into halves.  Then I stir in some tamari (gluten-free like soy) or another sauce.  Last time, I got an orange sauce by the same company that makes the tamari...it was in the "special" section of the commissary where they get in unique stuff and was $2.65 a bottle.  Then we just serve it with cooked rice or quinoa.
