I'd like to create a place here for those looking for frugal recipes to save money at the grocery.  Feel free to cross post your recipes in the other categories that they fit in as well.

Tater Tots

serves 5, as a side dish

3 medium potatoes, finely grated and dried well

1/4 cup all purpose flour

1 teaspoon salt, plus more for serving

1/2 teaspoon black pepper

1/4 cup canola oil

 

Mix the potatoes with the flour, salt, and pepper. Form into 1” logs.

Heat oil in a large pot until it is so hot that dripping a drop of water on the surface immediately sizzles and spatters. Add tots and fry until all sides are golden brown.




Fried Oatmeal - when you're tired of the plain ol' stuff in a bowl

We like to serve it with jam.  Yum!

1/2 cup steel cut oats
3 tablespoons raisins (optional)
2 teaspoons sugar
1 teaspoon corn oil (or oil of your choice.  we like coconut)
1 teaspoon unsalted butter
2 teaspoons unbleached flour
1/4 teaspoon ground cinnamon

Combine the oats with 2 cups of water in a small saucepan and cook, uncovered, over low heat about 45 minutes or until the oatmeal is soft and the liquid is almost totally absorbed. Add the raisins and sugar and cook 1 minute, then increase the heat to high and cook, stirring 1 minute, or until any excess liquid evaporates.

Lightly spray a 9 x 5-inch loaf pan with cooking spray and spread the oatmeal in a thin layer at the bottom. Smooth the top with a spatula. Lay a sheet of plastic wrap on the surface of the oatmeal and refrigerate at least 2 hours, or until firm. You can prepare this the night before.
Using a metal spatula, loosen the edges of the oatmeal and turn it out onto a cutting board. Cut the sheet in half lengthwise, then crosswise to make 4 equal pieces.

Heat the oil in a skillet over medium heat. When the oil is hot, add the butter. When the butter melts, dust the oatmeal slices with flour and cook them about 2 minutes on each side, or until well browned.
Divide the slices between 2 plates, sprinkle with cinnamon

When we're in a hurry, we just put the cooked oatmeal in a jar and then spread it on the cast iron fry pan in the morning.
