October Meal Plans

just wondering if anyone is working on this?

I am right now -- I hope to be done this weeks to share in a bit, I'll be back  ;)

I've got mine almost ready to go, just fine-tuning a couple of things.

ok, this is our menu for this week

9/28 (yesterday) - Chik Fil A Copycat recipe chicken, salad, carrot sticks and grapes
9/29 - Orange Chicken with stir fry veggies, rice, salad
9/30 - paleo zuppa toscana soup
10/1 - beef roast, potatoes and carrots
10/2 - slow cooker pork, baked sweet potatoes, salad
10-3 - ground beef stew, paleo biscuits
10/4 - we will be at a cabin that only has a microwave so we will probably bring leftovers to reheat  ;D

I am truly in AWE (how do I spell that word anyway?!) in Cheryl's menu plan for the whole month. I have no idea from day to day and there would be no way to make a plan like that. That is just awesome! My meals might possibly get discussed the night before and since they are so very simple meals we don't give it a lot of thought. We do however have a general idea what it is going to be. Since I have no prepackaged anything in the pantry it all has to be made from scratch. Last night was all the leftovers in the fridge and it was a vegetable beef barley soup! So good. I used yellow tomato puree and the last of the ketchup in the bottle along with leftover beef roast, cubed potatoes, some onion, carrots, celery, roasted red peppers and green beans. It was a cool night and it really hit the spot.

Today will be 3 leftover hotdogs and baked beans. Maybe a salad if we're still hungry.  This is as far as my planning is going. But assuredly, there will be something on Thurs. but I just don't what yet.

It might be some yellow beans and squash my dad gave me yesterday.  I can't wait to dig into that butternut squash. His garden probably has about 50 of them almost ready to harvest!

I might grab a few ideas from Cheryl's meal plan though since many of them look good and are things I had forgotten that could be an easy meal.

okay we have been all over the board lately and the rest of this month doesn't look any better but whatever ...... moving on  ;)

Saturday 10/4 - we did soup and sandwiches - after helping my mom move all day I did not feel like cooking (a smart woman would have used her crockpot  ;)  )
Sunday 10/5 - chili and cornbread
Monday 10/6 - french onion soup and meatball sandwiches (meat balls leftover from pasta day the other day)
Tuesday 10/7 -
Wednesday 10/8 -
Thursday 10/9 -
Friday 10/10 - pizza
Saturday 10/11 -
Sunday 10/12 - Thanksgiving - I am bringing Garlic Mashed potatoes and rolls
Monday 10/13 -
Tuesday 10/14 -
Wednesday 10/15 - Sunday 10/26 ~ HOLIDAYS so my mom and kids will figure it out  ;)

so sort of figured out  ;D

This week....

Sunday---smoked chicken and grilled corn on the cob with a salad
Monday---my Crohns is acting up so Sam got l/o chicken and corn and idk what Holden and Aaron will eat, probably oatmeal.
Tuesday--white beans, roasted cabbage and cornbread
Wednesday-black bean corn salsa (made with a handful of l/o grilled corn from Sun and home canned black beans) with tortilla chips and avocados on the side
Thursday--white chicken chili (with l/o chicken and white beans) with l/o cornbread on the side
Friday--roasted veggies over wild rice or quinoa (sweet potatoes, Brussels sprouts, chick peas, broccoli, onions and mushrooms)
Saturday--it's payweek so we will be going out to eat to our favorite hole in the wall joint.  :D

Beth, your meals sound delicious.  I especially like Wednesday's.  If I leave now, I could be in NC by then. ;D

I used to be able to plan a month at a time, but now that it is just the two of us, I have cut back to weekly.

Sunday, Oct. 5: Chili & cornbread
Monday, Oct. 6: White Bean & Chicken Enchilada Stuffed Peppers
Tuesday, Oct. 7: Beef Barley & Vegetable Soup
Wednesday, Oct. 8: Chicken or Vegetable Lo-Mein, homemade egg rolls
Thursday, Oct. 9: Fajitas, homemade refried beans, cilantro lime rice
Friday, Oct. 10: Out to dinner before a comedy show we are going to
Saturday, Oct. 11: Leftovers!!
